It was time for some food and the three course meal consisted of: Appetizer: Papaya Boat, Sail with Mango Salad, Jumbo Shrimp, Lobster & Seared Salmon Rosette accompanied by Lamb Lettuce Friscee, Lime Herb Vinaigrette. Main Course: Roasted Whole Tenderloin of Beef with Morel Sauce, Stuffed Potato with Herbs, Bouquetiere of Baby Vegetables include Patty Pan Squash, Baby Top Carrots, Baby Bok Choy & Asparagus Tips. Dessert: Lemongrass White Chocolate Mousse in a Marble Chocolate Tulip accompanied by Raspberry & Passion Fruit Coulis and garnished with Fresh Berries Deluxe Platter of Assorted Cookies, Chocolate Dipped Strawberries & Chocolate Almond Bark.

It's the Spectacular Samba Parade "Why Not Dream?" where you will be dazzled and amazed by the exuberant lead samba dancers from Rio's Elite Group of Samba Schools, renowned costume designers and star, gorgeous models and glamourous beauty queens originating from all over Brazil, stunningly attractive TV actors, award-winning singers, musicians and surprise attractions including appearances by Miss Universe Canada 2008 herself representing Canada, Ms. Samantha Tajik. The costumes were amazing and the carnival was filled with so much energy! This samba celebrates the endless optimism of the Brazilian people, their boundless energy and effervescence in living life to its fullest. Don't despair that you couldn't be part of the Samba Parade, because later in the night everyone was invited onto the dance floor and dance with all the beautiful and talented stars in costume! Dance your way into the night as you immerse yourself into the spirit of the carnival.
